Who Is Mistral Dawn?
Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Taken By The Huntsman is her first effort at writing fiction and if it is well received she has ideas for several more novels and short-stories in this series. #Celebrate #Spring With Pasta Primavera
Hey Everyone! :-)
Since the weather is getting warmer, I thought I'd share one of my favorite spring time recipes with you. Enjoy! :-)
Ingredients:
2 cups frozen peas
2 cups chopped broccoli
2 large tomatoes chopped
1 zucchini or yellow summer squash sliced
1 red bell pepper chopped
1 16oz package sliced button mushrooms
1 small onion chopped
6 cloves garlic minced
1 bag bow-tie pasta (or whatever shape of pasta you like)
1/2 cup vegetable stock
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
2 tbsp butter
3 tbsp olive oil
Salt and pepper to taste
Boil water in a stock pot and add 2 tbsps salt. When water is boiling, add pasta and cook until al dente. Remove pasta from water and set aside.
Put the butter and olive oil into a skillet and heat until butter melts. Add the onion and cook until it starts to caramelize. Add the garlic, bell pepper, mushrooms, and zucchini and cook until softened. Add the broccoli and tomato and stir together. Add the vegetable stock and stir together. Add the frozen peas and stir in the cream. Stir in the cheese and taste. Adjust salt and pepper as necessary. Cook until completed sauce starts to bubble, stirring continuously. Remove from heat, stir in cooked pasta, and serve.
