Who Is Mistral Dawn?
Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Taken By The Huntsman is her first effort at writing fiction and if it is well received she has ideas for several more novels and short-stories in this series. Spicy Lentil And Potato #Crockpot Stew #Recipe!
Hey Everyone!! :-)
Today, I've got a little bit of spice to warm you up. Enjoy! :-)
Ingredients:
4 cups water or vegetable stock
1 pound brown lentils rinsed and cleaned
4-6 potatoes peeled and chunked
2 onions chopped fine
1 14oz can diced tomatoes
2 bell peppers seeded and chopped
1 chili pepper chopped fine
3 cloves garlic minced
3/4 cup toasted slivered almonds
1/2 cup cilantro leaves chopped
1 1/2 teaspoons garam masala seasoning
1/2 teaspoon ground cumin
2 tbsp olive oil
Salt and pepper to taste
Put the potatoes, lentils, tomatoes, and water in a crock-pot, cover and set to high. In a skillet, saute the onions and peppers in the olive oil until the peppers are soft and the onions start to caramelize. Add the almonds and stir until they start to toast. Add the garlic and seasonings and stir until thoroughly combined. Transfer the contents of the skillet to the crock-pot, stir together, and continue to cook on high until the potatoes and lentils are soft, approximately 5 hours. Stir in the cilantro. Serve hot in a bowl or over rice or quinoa.
