Who Is Mistral Dawn?
Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Light, Creamy Pasta #Recipe!
Hey Everyone!! :-)
This is a quick and easy pasta dish that takes minutes to make and doesn't require you to turn on the oven on a hot, summer evening. Enjoy! :-)
Ingredients:
1 lb spaghetti or angel hair pasta
3 cups fresh spinach chopped
2 large tomatoes chopped
1 large onion chopped
1 20oz container button mushrooms sliced
1/2 cup fresh basil chopped fine
1/2 cup fresh oregano chopped fine
6 cloves garlic minced
2 cups white wine (your choice)
2 cups milk
2 tbsp olive oil
Salt and pepper to taste
Drop your pasta into salted, boiling water and cook until nearly done. Remove 1 cup of water from the pasta and set aside. Drain pasta and set aside. In a large, deep-sided skillet, add the onion and the olive oil. Saute until the onion begins to caramelize and add the mushrooms, garlic, and tomatoes. Continue cooking until the mushrooms soften and the tomatoes begin to break down. Add the rest of the ingredients except the milk and simmer for about 7-10 minutes to allow the wine to reduce. Add the milk and stir to combine. Add the pasta and the retained pasta water and stir until all the ingredients are equally distributed and the pasta is coated with the sauce. Remove from the heat and serve warm with a side of crusty bread.
