Hey Everyone!! :-)
This is one of my favorite soups. It seems like it would be really light, but because the cheese is so rich, it's actually very hearty and filling. Enjoy! :-)
Ingredients:
4 cups vegetable stock or water
2 cups ditalini pasta
1 28oz can crushed tomatoes
2 12oz cans white beans
3 onions diced
6 cloves garlic minced
3 cups fresh basil chopped
1 cup fresh oregano chopped
1 cup pecorino romano shredded
3 tbsp olive oil
Salt and pepper to taste
In a stockpot, add the onions and olive oil and saute until the onions start to caramelize. Add the garlic, oregano, and half the basil and stir until the herbs wilt. Add the tomatoes, salt and pepper, and stock or water and stir to combine. Add the beans and stir to combine. Bring the soup to a boil and then reduce the heat and simmer for an hour or two, stirring occasionally. Taste and adjust seasonings as necessary. Add the pasta and continue simmering until the pasta is almost cooked. Remove from the heat and stir in the cheese and the rest of the basil. Serve hot with a side of crusty bread.
