Who Is Mistral Dawn?

Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Chickenless #Soup #Recipe!



Hey Everyone!! :-)

This is a delicious, easy to make soup that will make you not miss the chicken. Enjoy! :-)

Ingredients:
6 cups chickenless broth (Chickenless Broth Recipe)
4 onions chopped
2 carrots chopped
2 stalks celery chopped
1 cup broccoli florets chopped
8 cloves garlic minced
2 cups cooked potatoes, rice, quinoa, or uncooked pasta
2 tbsp dried oregano
2 tbsp dried basil
2 cups fresh parsley chopped
1 tbsp paprika (optional)
2 tbsp sriracha (optional)
1/4 cup olive oil
Salt and pepper to taste

Put the olive oil, onions, carrots, and celery in a soup pot and saute until the onions turn translucent and all the vegetables soften. Add the garlic and dried seasonings and continue to saute until the onions start to caramelize. Add the remaining ingredients except for your chosen starch and the broccoli. Bring the soup to a boil, then lower the heat to a simmer and cook for 20-30 minutes. Add your starch and the broccoli and continue to simmer for 5-10 minutes. Serve piping hot with a side of crusty bread.

As an alternative, you can use one of those poppable cans of biscuit dough that you find in the refrigerated section of your grocery store to make chickenless dumpling soup. Just cut or tear the dough into 1-inch pieces and add it when you add the broccoli. Once the dough is cooked, stir in 1 cup of heavy cream and remove the soup from the heat.
