Who Is Mistral Dawn?

Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Taken By The Huntsman is her first effort at writing fiction and if it is well received she has ideas for several more novels and short-stories in this series. #Wintertime Lentil #Soup #Recipe!



Hey Everyone!! :-)

Today, I've got a hearty soup recipe to warm you up on these cold winter nights. Enjoy! :-)

Ingredients:
3 cups vegetable stock
1 cup brown lentils
4 leeks chopped
1 onion chopped
1 28oz can crushed tomatoes
2 sweet potatoes peeled and chopped
2 potatoes peeled and chopped
2 cups kale chopped
5 cloves garlic minced
2 tbsp oregano
1 tbsp cumin
2 bay leaves
1 tbsp thyme
1/4 cup pecorino romano grated
2 tbsp olive oil
2 tbsp butter
Salt and pepper to taste

In a large soup pot, add the olive oil, onions, and leeks and saute until the vegetables soften. Add the garlic, bay leaves, and butter and continue to saute until the onions start to brown. Add the lentils, tomatoes, potatoes, sweet potatoes, and stock and stir to combine. Add the oregano, cumin, salt and pepper, and thyme and reduce heat to a simmer. Simmer until the lentils and potatoes soften, stirring occasionally. Taste and adjust seasonings as necessary. Remove the bay leaves and stir in the kale and cheese. Stir until cheese melts completely and remove from heat. Serve hot with a side of crusty bread.
