Hey Everyone!
Today, I've got a recipe to help warm you up on those cool Autumn nights. :-)
Ingredients:
8 cups water
2 cups dry lentils
2 onions chopped
1/4 cup olive oil
2 carrots diced
2 stalks celery chopped
1/2 cup spinach rinsed and thinly sliced
4 cloves garlic minced
2 tsp dried oregano
1 bay leaf
1 tsp dried basil
1 14 oz can crushed tomatoes
2 tbsp red wine vinegar
Salt and pepper to taste
Put the olive oil, onions, carrots, and celery in a skillet and saute until the vegetables get soft and the onions start to caramelize. Add the garlic and stir to distribute it, and then transfer the vegetables to a crock-pot and add the rest of the ingredients. Cook on high for 4-5 hours or until the lentils are soft. Remove bay leaf and serve the soup hot with crusty bread.
