Who Is Mistral Dawn?

Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. Easy Cheesy Potato Casserole #Recipe!


Hey Everyone! :-)

Today, I'd like to share one of my favorite cheesy potato recipes with you. Enjoy! :-)

Ingredients:
10 baking potatoes peeled and sliced thin
3 large tomatoes sliced
2 onions sliced thin
2 cups mozzarella and cheddar cheese mix shredded (or your favorite melty cheese combo)
1 4 oz package garlic herb cream cheese spread
1/4 cup Pecorino Ramano cheese grated
2 cups milk
2 tbsp all-purpose flour
4 tbsp butter
Salt and pepper to taste

In a pot, melt three tablespoons of butter and add the onions. Sautee until onions caramelize. Remove the onions and set aside. Add the remaining tablespoon of butter and the flour and stir together continuously until flour browns. Add milk, salt, and a good amount of black pepper, and whisk until smooth. Add shredded cheese mix a handful at a time, stirring continuously, until all of it is melted and the sauce is smooth.

In a buttered baking dish, spread a layer of the sliced potatoes. Spread with herb cheese spread and sprinkle with black pepper. Add a layer of sliced tomatoes and sprinkle with Pecorino Ramano. Ladle a little of the sauce over it. Repeat for as many layers as you have ingredients for, ending with a layer of potatoes. Pour the remaining sauce over the top and sprinkle with the last of the Pecorino Ramano.

Bake casserole for 40-45 minutes at 375 degrees Fahrenheit or until top is golden brown, potatoes are soft, and center is bubbly. Allow to cool for 15-20 minutes before serving.
