Who Is Mistral Dawn?
Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Taken By The Huntsman is her first effort at writing fiction and if it is well received she has ideas for several more novels and short-stories in this series. Easy Lettuce Wrap #Recipe!
Hey Everyone!! :-)
Since we're well into the new year, now, I thought I'd share a lighter recipe to help us all try to stick to those diets we promised ourselves we'd do. Enjoy! :-)
Ingredients:
4 large lettuce leaves
1 cup brown rice cooked
1 14oz package button mushrooms sliced
1 large onion chopped
1 large tomato chopped
1 zucchini chopped
1 large carrot shredded
1 bell pepper chopped
2 cups baby spinach leaves chopped
1 12oz can kidney beans drained and rinsed
1 cup pine nuts toasted
5 cloves garlic minced
2 cups fresh basil shredded
1 cup red wine (your choice) or 1/2 cup red wine vinegar
2 tbsp olive oil
2 tbsp sriracha (optional)
Salt and pepper to taste
Put the olive oil in a skillet with the onions and pepper and saute them until they soften. Add the mushrooms and continue to saute the vegetables until the mushrooms soften. Add the remaining vegetables, beans, garlic, salt and pepper, and sriracha (optional), and continue to saute until the spinach leaves are wilted. Add the pine nuts and deglaze the pan with the wine or vinegar. Simmer for a few minutes while stirring to combine all the ingredients. Add the rice and stir to combine. Remove from the heat and serve the vegetable and rice mixture on top of the lettuce leaves.
