Who Is Mistral Dawn?

Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Easy, Quick Pasta Salad #Dinner #Recipe!


Hey Everyone! :-)

Today, I thought I'd share one of my favorite pasta salad recipes with you. Enjoy! :-)

Ingredients:
4 cups cooked and cooled bow-tie (or your favorite shape) pasta
2-3 tomatoes chopped
1 zucchini chopped
1 20oz can sliced black olives drained
1-2 bell peppers (any color) seeded and chopped
1 chili pepper seeded and chopped (optional)
1 cucumber chopped
1 cup chopped spinach or kale
1 cup shredded carrots
1 20oz can kidney beans drained
1/2 cup chopped or shredded fresh basil
1 cup extra virgin olive oil
1/4 cup balsamic or red wine vinegar
2 tsp dried oregano
1 tsp dried parsley
5 cloves minced garlic
Salt and pepper to taste

Put the pasta, vegetables, and beans in a large bowl and toss to distribute evenly. In a separate bowl, whisk together the olive oil, vinegar, dried herbs, salt and pepper, and garlic. Pour the dressing over the pasta and vegetables and toss until evenly coated. Serve chilled.

If you're in a hurry, you can use bottled Italian dressing instead of making your own, but it tends to be a bit salty. Also, obviously, you can eliminate or substitute any of the vegetables with whichever vegetables you prefer.
