This is a recipe my mom used to make when we had leftover rice and vegetables and she needed an easy, fast, kid-pleasing meal. Truth be told, I still enjoy it, sometimes. ;-)
Ingredients:
2-4 cups leftover cooked rice (your favorite kind)
1-2 cups leftover vegetables (whatever kind you have on hand)
1-2 cups leftover tomato sauce
2 cups mozzarella cheese shredded
1 tbsp Italian dry seasoning mix
Salt and pepper to taste.
In a bowl, mix together the rice, vegetables, sauce, seasonings, and 1 cup of the cheese until they are thoroughly combined. Transfer the contents of the bowl to a buttered baking dish. Sprinkle the remaining cheese on top. Bake in a 400 degree Fahrenheit oven until the cheese on top is brown and bubbly. Serve piping hot with a side of crusty bread.
