This is an easy casserole you can usually throw together with leftovers. Enjoy! :-)
Ingredients:
4-6 cups leftover mashed potatoes
2 eggs
1 carrot shredded or chopped small
1 cup frozen or leftover peas
1 cup frozen or leftover broccoli
1 cup mushrooms chopped
2 onions chopped fine
4 cloves garlic minced fine
1 tbsp paprika
1 tbsp cumin
1 tbsp turmeric
2 tsp chili pepper flakes
1 cup white wine (your choice)
1/2 cup melted butter
1 cup mozzarella or cheddar cheese shredded
Salt and pepper to taste (you'll want to use a fair amount of pepper)
Put the potatoes, carrots, peas, broccoli, dry seasonings, and eggs in a large bowl and mix together. In a skillet, add the butter and onions and cook until the onions start to caramelize. Add the mushrooms, garlic, and wine and cook until the wine reduces. Remove the pan from the heat and add the contents to the bowl. Mix until everything is combined evenly. Transfer the contents of the bowl to a buttered baking dish. Put the dish into the oven at 400 degrees Fahrenheit and cook until the top starts to brown. Sprinkle the cheese over the top and return the dish to the oven. Finish cooking until the cheese melts and browns. Serve piping hot.
