Hey Everyone!! :-)
This is an easy pasta salad recipe that's great for work lunches or picnics because it has no mayo in it to spoil. Enjoy! :-)
Ingredients:
2 cups lentils cooked and cooled
4 cups bowtie pasta cooked and cooled
1 cup carrots shredded
1 cup pepperoncini peppers diced
1 cup broccoli chopped
1 cup cauliflower chopped
1/2 cup black olives sliced
1/2 cup onion chopped fine
4 cloves garlic minced
4 tbsp dried Italian seasoning
3/4 cup red wine vinegar
2 cups extra virgin olive oil
In a large bowl, toss together the lentils, pasta, carrots, peppers, broccoli, cauliflower, olives, and onion until they are completely mixed. In a separate bowl, whisk together the remaining ingredients and then pour over the contents of the first bowl and toss until all the ingredients are completely coated. Serve chilled.
