This is one of my favorite summertime picnic recipes. Enjoy! :-)
Ingredients:
1 head broccoli shredded
4 large carrots shredded
1 yellow bell pepper seeded and shredded
1 red bell pepper seeded and shredded
1 small head purple cabbage shredded
1 zucchini shredded
5 radishes shredded
1 apple shredded
2 tbsp sriracha
1 cup apple cider vinegar
2.5 cups olive oil
3 tbsp red pepper flakes
1 tbsp dried oregano
1 tbsp ground black pepper
1 tbsp salt
Put all your shredded veggies and fruit in a large bowl and toss together. To shred them all, you can pulse them in a food processor so that you don't have to do it by hand. Just make sure you drain any excess liquid before tossing them together. In a separate bowl, whisk together the remaining ingredients until thoroughly mixed. Taste for seasoning and adjust as necessary. Pour the dressing over the mixed veggies. Toss to coat. Serve chilled.
