Hey Everyone!! :-)
This is a quick, easy meal that you can throw together in a few minutes, but never fails to satisfy. Enjoy! :-)
Ingredients:
2 slices rye bread
1 1 inch thick slice of mozzarella cheese
1/3 cup homemade cranberry sauce (not the gelatinized kind you get in a can)
1 tbsp butter
Butter both sides of both slices of bread and melt the remaining butter in a skillet. Put one slice of bread down in the melted butter and put the cheese on top of it. Spoon the cranberry sauce over the cheese and spread in an even layer. Put the other slice of bread on top of the cranberry sauce and cook until the cheese begins to melt and the first side is golden brown. Flip over and cook until the second side is golden brown. Remove from heat and cut in half. Serve warm with a simple green salad on the side.
