This is an easy panzanella recipe that's perfect for warmer weather. Enjoy! :-)
Ingredients:
3 cups stale bread cut into 1-inch cubes
2 cups 1-inch fresh mozzarella balls
1/4 cup pecorino romano grated
2 large tomatoes diced
1 cup fresh basil shredded
1/2 cup fresh oregano shredded
4 cloves garlic minced
1.5 cups olive oil
1/2 cup red wine vinegar
Salt and pepper to taste
In a bowl, whisk together the olive oil, vinegar, garlic, oregano, garlic, romano cheese, half the basil, and salt and pepper. In a separate, larger bowl, add the bread and half the dressing. Toss to combine and add all the remaining ingredients and the rest of the dressing. Toss to combine and serve chilled.
