Who Is Mistral Dawn?
Mistral Dawn is a thirty-something gal who has lived on both coasts of the US but somehow never in the middle. She currently resides in the Southeast US with her kitty cats (please spay or neuter! :-)) where she works as a hospital drudge and attends graduate school. Taken By The Huntsman is her first effort at writing fiction and if it is well received she has ideas for several more novels and short-stories in this series. Quick Spinach Saute #Recipe!
Hey Everyone!! :-)
This is a meal that's easy to throw together quickly on a weeknight, but is still delicious and will fill you up. Enjoy! :-)
Ingredients:
4 cups cooked brown rice or pasta (your favorite kind)
4 cups spinach leaves
1 large onion chopped fine
1 granny smith apple peeled, cored, and diced
1 cup raisins
1 cup toasted walnuts chopped
5 cloves garlic minced
2 tsp dried rosemary
1/2 tsp ground nutmeg
1/4 tsp ground cinnamon
1 cup red wine (your favorite kind)
1/2 cup water
1/4 cup olive oil
Salt and pepper to taste
Add the olive oil and onion to a large saute pan and cook until the onion becomes translucent. Add the garlic, apple, rosemary, raisins, and salt and pepper and continue cooking until the onions start to caramelize. Add the spinach, water, and wine and continue cooking until the spinach wilts. Taste and adjust seasonings as necessary. Remove the pan from the heat and serve the spinach mixture over warm rice or pasta. Sprinkle the walnuts over the top.
