Spicy Lentil And Potato #Crockpot Stew #Recipe!


Hey Everyone! :-)

Today, I've got a little bit of spice to warm you up. Enjoy! :-)

Ingredients:
4 cups water or vegetable stock
1 pound brown lentils rinsed and cleaned
4-6 potatoes peeled and chunked
2 onions chopped fine
1 14oz can diced tomatoes
2 bell peppers seeded and chopped
1 chili pepper chopped fine
3 cloves garlic minced
3/4 cup toasted slivered almonds
1/2 cup cilantro leaves chopped
1 1/2 teaspoons garam masala seasoning
1/2 teaspoon ground cumin
2 tbsp olive oil
Salt and pepper to taste

Put the potatoes, lentils, tomatoes, and water in a crock-pot, cover and set to high. In a skillet, saute the onions and peppers in the olive oil until vegetables are soft and onions start to caramelize. Add the almonds and stir until they start to toast. Add the garlic and seasonings and stir until thoroughly combined. Transfer the contents of the skillet to the crock-pot, stir together, and continue to cook on high until potatoes and lentils are soft, approximately 5 hours. Stir in cilantro. Serve hot in a bowl or over rice or quinoa.
