A Quick Meal For Days On The Go #Recipe!

 



Hey Everyone!! :-)

This is a really simple recipe for those days when you just don't have two minutes to rub together. It's quick and easy with almost no clean-up. And it's delicious! :-)

Ingredients:
1 English muffin or 2 slices of bread
1/2 cup hummus (your favorite flavor)
1 carrot
1 apple
1 zucchini
2 tbsp toasted pine nuts or sesame seeds

Toast the muffin or bread and spread the hummus over it while it's still warm. Use a vegetable peeler to peel off a strip or two from the carrot, apple, and zucchini and lay the strips on top of the hummus. Sprinkle the nuts or seeds over the top. Eat immediately or wrap up to take with you and eat on the go. Wrap the unused portions of the carrot, apple, and zucchini tightly in plastic wrap and refrigerate to use in other recipes or to eat later as snacks.
