Yummy Veggie Pasta #Recipe!



Hey Everyone!! :-)

Today, I've got a yummy, easy pasta and vegetable dish to share with you. Enjoy! :-)

Ingredients:
2 cups uncooked bowtie pasta
2 cups cooked lentils
1 cup vegetable stock
1 carrot peeled and diced
1 cup frozen peas
1 tomato diced
1 onion chopped
1 20oz package button mushrooms sliced
6 cloves garlic minced
1 cup milk
4 tbsp butter
1/4 cup olive oil
4 tbsp flour
Salt and pepper to taste

Heat a pot full of water to boiling and add a teaspoon, or so, of salt. Add the pasta and cook until almost, but not quite, cooked. Remove the pasta from the heat, drain it, and set it aside.

Put the olive oil and onion in a large, deep-sided skillet. Saute the onion until it starts to caramelize, and then add the carrot. When the carrot starts to soften, add the mushrooms and garlic. Continue sauteing until the mushrooms soften. Remove the vegetables from the pan and add the butter and the flour. Cook the flour until it starts to brown and whisk in the stock. Continue whisking briskly until all the lumps are dissolved and then add the vegetables back to the pan. Add the lentils, tomato, and peas to the pan and stir in the milk. Once the milk is combined, add the pasta to the pan and allow it to simmer until the pasta finishes cooking. Remove the pan from the heat and serve the pasta dish warm with a side of crusty bread.
