Versatile Pasta #Salad #Recipe!



Hey Everyone!! :-)

This is one of my favorite pasta salad recipes because it's something you can serve either warm or cold. Enjoy! :-)

Ingredients:
1 lb Orecchiette or Farfalle pasta
4 cups asparagus cleaned and chopped
4 cups crimini mushrooms sliced
1 bell pepper chopped
1 onion diced fine
1/2 cup green onion chopped
4 cloves garlic minced
1/4 cup parsley chopped
1/4 cup basil chopped
1/4 cup Pecorino Romano grated
1/2 cup olive oil
1.5 cups Italian salad dressing (your choice of brand or homemade)
Salt and pepper to taste

Place the pasta in boiling, salted water and cook until just tender. Drain and set pasta aside. In a large skillet, place the olive oil, salt and pepper, onions, pepper, garlic, mushrooms, and asparagus. Saute until vegetables start to soften and add the basil and parsley. Stir to combine and remove from heat. Toss vegetables with the pasta, cheese, and salad dressing. Serve warm or chill and serve cold.
