#Easy #Cheesy Quesadillas!


Hey Everyone!

Today, I thought I'd share one of my favorite go-to meals for when I'm in a hurry. Enjoy! :-)

Ingredients:
2 corn (or flour) tortillas per quesadilla
1/2 cup shredded cheese (your choice for kind/blend of cheese) per quesadilla
1/4 cup diced tomato per quesadilla
1 tbsp diced chili pepper per quesadilla
1/4 cup sliced button mushrooms per quesadilla
1 tbsp diced black olives per quesadilla
1 pat of butter per quesadilla

Melt the butter in a skillet and place one tortilla in the butter over medium heat. Spread the cheese over the tortilla in an even layer, leaving a little room around the edges, and then sprinkle the vegetables over the cheese. Put the second tortilla on top. Once the cheese starts to melt, flip the quesadilla over so it can brown on the other side. Once both sides are browned, remove from the skillet and cut into quarters. Serve and enjoy.

Obviously, any of the vegetables can be omitted or substituted for something else. As always, I prefer my quesadillas without meat, but if you'd like you can add cooked and shredded chicken, cooked and shredded pork, or cooked ground or shredded beef. Just make sure the meat is completely cooked before you add it because food poisoning sucks.
