Easy #Crockpot #Taco Filling #Recipe!
Hey Everyone! :-)
Today, I wanted to share a really easy vegetarian taco recipe. :-)
Ingredients:
1/2 cup dried lentils
1/4 cup uncooked quinoa or rice
1/4 cup frozen corn
2 cups water or vegetable stock
1 small tomato diced
4 cloves minced garlic
1/2 tsp chili powder
1 tbsp cumin
1/2 tsp paprika
1 bay leaf
1 drop liquid smoke (optional)
Salt and pepper to taste
Place all ingredients in a crock-pot on low for about 7 hours, or so, and check to see if liquid has been absorbed and beans and grain are soft. Adjust liquid/cook time as necessary. Taste and adjust seasonings as necessary. When beans and grain are soft, remove the bay leaf, spoon filling into your favorite taco shells, and top with your favorite salsa, guacamole, cheese, and other taco toppings.
